<p>Ik schreef vorige keer al even over een gezonde darmflora. Hoe meer ik mezelf hierin verdiep en over te weten kom, hoe gefascineerder ik raak over hoe bijzonder het is hoe het lichaam werkt! Mijn collega Lydia maakt al jaren zelf waterkefir. Ze nam dit weleens voor me mee, en ik was aangenaam verrast door de frisse smaak van deze drank. Ik moest daarentegen wel even wennen aan haar uitleg over levende, zichzelf uitbreidende korrels. Ik snapte er maar weinig van en het klonk ook een beetje buitenaards.</p>
<h3>Weckpotten en bacteriebommen</h3>
<p>Inmiddels snap ik dat dit een fermentatieproces is (of rottingsproces, zo u wilt), zoals dat ook gedaan wordt bij zuurkool en andere in het zuur gelegde groenten. Denk aan de good old augurk, zilveruitjes of atjar bij de bami. Inmiddels is het weer helemaal hip om te fermenteren en staan die weckpotten ook niet onaardig in de gemiddelde keuken. Maar behalve hip is het vooral superslim om te doen, want drankjes zoals kefir (gebaseerd op waterkefir en gistend gedroogd fruit) of kombucha (gefermenteerde thee) zijn rijk aan een schat van levende bacteriën die je darmen juichend verwelkomen.</p>
<h3>Immuunsysteem</h3>
<p>De gemiddelde Nederlander heeft namelijk maar een armzalige variëteit in soorten darmbacteriën, terwijl hier het spreekwoord ‘hoe meer hoe beter’ toch echt opgaat. In gefermenteerde voeding en drank zit een schat aan bacteriën die de variatie behoorlijk opkrikken. Je kunt de soorten bacterieën een beetje vergelijken met een leger: hierbinnen heb je manschappen, mensen te paard, op de tank, spionnen, verkenners, etc. Elke soldaat heeft zijn eigen specialisme en functie. Hoe meer van die soorten bacteriën er in jouw darmen huizen, hoe beter jouw darmen zijn uitgerust om ongewenste bezoekers zoals virussen en andere ziektemakers te lijf te gaan. <h3>Eigen kweek</h3>
<p>Dus toen ik een paar keer kefir op had, werd ik nieuwsgierig naar kombucha, maar dit is vrij prijzig om los te kopen. Ik besloot het daarom maar in één keer goed aan te pakken en een startset voor het maken van eigen kombucha te kopen. Inmiddels staat mijn 2 liter lekker te gisten en kan ik niet wachten om de eerste batch te proeven.</p>
